As the SOLARIS cruises out into the open waters, get ready to indulge in a five-course meal fit for royalty. Begin with a Korean Braised Pork Belly appetizer with house-made Kimchi. For the soup course, enjoy the award-winning, flavorful SOLARIS Shrimp and Crab Gumbo. An Arugula and Pear Salad follows with roasted D’Anjou Pear, Kumato, Maple and Mustard Vinaigrette.
The most difficult decision of the night will be choosing one of these savory entrees: Braised Lamb Shank with Roasted Garlic and Truffle Mashed Potatoes, Winter Squash Medley and Pomegranate Demi-Glace; Pistachio-Crusted Grouper with Jumbo Lump Crab over wild herb rice, winter squash medley, lemon and dill buerre blanc; Beef Filet with Lump Crab, Roasted Garlic and Truffle Mashed Potatoes, Winter Squash Medley, Pomegranate Demi-Glace; Roasted Chicken stuffed with Prosciutto and Fontina Cheese, Roasted Garlic and Truffle Mashed Potatoes, Winter Squash Medley and White Wine Butter Sauce; or Classic Ratatouille with French Provencal Stewed Vegetables over Wild Herb Rice. The Grand Finale is a delicious Spiced Bread Pudding with Apple Pucker Creme Anglaise and Whipped Cream.
